How about giving the term "fruit cake" a new meaning?
That was my goal recently when I came up with a delicious and nutritious way of fulfilling a toddler's desire to eat "cake".
I made fresh watermelon cakes with strawberry and honeyfilling. Then I decorated the top with homemade cream cheese frosting.
Enjoy!
1. First you start by cutting and peeling a watermelon... I spy a Watermelon with Mickey ears!! |
2. Next you make small, round cutouts from approximately half-inch watermelon slices. I used a measuring cup but a cookie cutter or the rim of a glass would work as well. |
4. Make sure you slice the strawberries thinly and bring out the honey! |
5. Pour a bit of honey on the center of the watermelon cutouts. The honey will add an element of sweetness and help the strawberries stay in place. |
6. Carefully use the strawberries to dab honey from the center and arrange around the round watermelon slice. |
7. Once your filling is ready, place another watermelon slice over it and spread cream cheese frosting over the top |
8. To garnish, you can use sprinkles and add either a raspberry or a cherry!! They are so delicious, fresh and easy to make...a much better option than a carb-filled cake (although we love cake too)! |
