20-Minute Frozen Salmon Recipe for Busy Mommies

 
I looked in my freezer last night and saw a bag with individually packaged salmon fillets that had been sitting there for a while. I was kind of dreading salmon for dinner because fish is one of those things that taste better when purchased fresh but I pulled the bag out of the freezer and placed it in the fridge to let it thaw overnight.
 
I looked up several salmon recipes and found one that pretty much required ingredients that I already had at home and only took five minutes to prep and 15 minutes to bake!
It’s a Dijon Salmon Recipe from allrecipes.com that turned out to be fantastic. My husband nearly ate all the fillets…
 
Ingredients (Four servings):
Salmon Fillets; ¼ Cup of Butter, Melted; 3 TBSP Dijon Mustard (I used Grey Poupon); 2 TBSP Honey (I used Trader Joes Mostly Mesquite Honey); ¼ cup Bread Crumbs and ¼ cup Chopped Pecans.
 
Directions: Preheat oven to 400 degrees F. Place the fillets on a baking pan, skin down. In a small bowl, stir together the honey, mustard and butter & set aside. On a different bowl, mix bread crumbs and pecans. Brush each salmon fillet with honey mustard mixture and sprinkle bread crumb mixture over the fillets.
Bake salmon for 15 minutes. You can season with salt, pepper and the recipe calls for fresh parsley but I didn’t have any at the time and it still tasted delicious!

Anoche me asomé en el congelador y vi una bolsa con filetes de salmón que había estado allí por un tiempo. La idea de preparar salmón para la cena me enfadaba porque el pescado es una de esas cosas que saben mejor cuando se compra fresco pero saqué la bolsa y la puse a descongelar durante la noche dentro del refrigerador.
Estuve buscando recetas de salmón congelado y encontré una que más o menos pedía ingredientes que ya tenía en casa y sólo tardó 5 minutos para preparar y 15 minutos para hornear!
Es un salmón ‘Dijon’ que encontré en el sitio www.allrecipes.com y que resultó muy rico. Tanto así que mi marido se comió casi todos los filetes...
 
Ingredientes (para 4 porciones):
Filetes de salmón; ¼ de taza de mantequilla, derretida; 3 cucharadas de mostaza de Dijon (yo utilicé la marca Grey Poupon); 2 cucharadas de miel (yo utilicé la de marca Trader Joe’s ‘Partially Mesquite Honey’); ¼ taza de pan o galleta rallada y una taza de nueces picadas ¼.
 
Instrucciones: Caliente el horno a 400 grados F. Coloque los filetes en una bandeja para hornear, con la piel hacia abajo. En un tazón pequeño, mezcle la miel, la mostaza y la mantequilla y dejar a un lado. En otro tazón, mezclar el pan rallado y las nueces. Cepille cada filete de salmón con la mezcla de mostaza y miel y espolvoree la mezcla de nueces sobre los filetes.
Hornee el salmón durante 15 minutos. Al sacar, puede sazonar con sal, pimienta y la receta pide perejil fresco, pero yo no tenía perejil en casa y aún así gozamos el salmón y !se nos hizo delicioso!
